I have a SNAP-AIV-4 module, can it be used with a 4 to 20 mA sensor by placing a 220 ohm resistor in parallel to one of the channels?

Yes, I have done exactly that a few times.
You can tweak the scaling (and or the resistor value) to get the units and range you are looking for.
